Mina Aparicio’s Shrimp Dip

My previous post mentioned Mina and her talents in the kitchen.  Below is her famous shrimp dip recipe that her daughter Lizzie graciously shared.

Mina Aparicio’s Shrimp Dip

.

Ingredients:
5 lbs of peeled and deveined cooked shrimp, chopped
1 cup mayonnaise
1 cup sour cream
1/4 cup chopped onion
1/4 cup celery, chopped
1/4 cup bell pepper, chopped
Directions:
1. Combine all ingredients in large bowl.
2. Mix well.
3. Chill until served.

Aparicio and Four Generations of Friends

Sometimes families just click.

That is the way it was for my family and the Aparicios of Palacios, Texas.

Growing up, both my parents and grandparents were friends with Homer and Mina Aparicio.  Homer was a shrimper and Mina was his lovely wife and an amazing cook.  I remember going over to their home for

“shrimp fries.”

Can you imagine eating endless fried shrimp?

Mina and the ladies would fry Homer’s fresh Gulf shrimp and the men would set around talking – mostly about horses.

Naturally, Hedy, Audrey and I became friends with the Aparicio kids.  There were eleven of them!  Talk about fun – Diana and Lizzie were closest in age, but Nick (aka Nickie One Time), Ernie, and Alfred hung out with us too.  Lizzie sent me this picture of all of kids at Garner State Park.  Looks to be around 1973.  (I remember that red checked top - go figure)

So now, the fourth generation of Aparicios and McMullens are friends.  Taylor (Audrey’s oldest) and ‘lil Homer (Homer’s grandson) are buddies in the horse industry.  Just goes to show that apples don’t fall far from the tree.
